Quick and easy healthy breakfast that you can make ahead of time

Back to the grind for me tomorrow. Why is it that summer seems to just fly by?! Apart from going back to work, I do look forward to fall ;)

I love fall, the colors, scents, coolness and getting back to a routine. I don't know about you, but I definitely eat better while working and in a regular routine. I do admit though, that I can be lazy...and having healthy things made ahead of time works well for me.

I have seen many versions of chia pudding and I have adjusted this one until it suited me. I like to add hemp hearts and oatmeal rather than all chia because they too have their own health benefits.

Cinnamon helps to regulate blood sugar, inflammation among other things.

Collagen Powder a powder form of protein that is more easily absorbed by the body. Protein has a high thermogenic effect (body has to work hard to digest) thus it keeps the metabolism up slightly for a few hours after eating. And as a side note, collagen helps to repair gut lining and is great for skin and hair health!

Bananas sometimes get a bad wrap - but they too are a great way to start the day, and when slightly ripe, help to sweeten this naturally.



So here goes - it is so easy!

1/2 cup unsweetened almond milk (soy or regular milk)
2 TBSP chia seed
2 TBSP hemp hearts
2 TBSP oatmeal
1TBSP flax (optional)
1 TBSP Collagen powder
1/2 scoop protein powder (or substitute greek yogurt)
1 tsp cinnamon
1/2 banana
1/2 tsp vanilla

Sweeten as desired

Combine all in a jar (things taste better out of a mason jar don't they?) and refrigerate overnight. I make 2 or 3 jars at a time then I am good for the week as the other mornings I have smoothies.

In the morning I just add some chopped nuts (Brazil nuts provide selenium which is needed in thyroid health and thyroid is important in metabolism) (1 TBSP) and berries (usually frozen blueberries) and heat in microwave. Good to go! You can adjust the sweetness for your own taste.


For a variation: add 2 TBSP of pumpkin puree and some pumpkin pie spice
